Delicious Breakfast Recipes

Avocado Toast with bacon and egg (2 Portions)

Cooking Time: approx. 15min

  • 4 Slices of Toast or Bread
  • 1 Avocado
  • 2 Eggs
  • 4 Slices of Bacon
  • Salt & Pepper
  • Optional: Lemon Juice & Chili Flakes

  • Frying Pan
  • Stove Top

The first step is to pan fry the bacon. This will cut out the fat that you will use for the flavor profile of the rest of the sandwich. Once the bacon is cooked, remove it from the pan and place it on a paper towel to drain.

Next, toast your bread slices in the bacon fat. Is that healthy? No way! Is it delicious, oh yes! Once both sides are toasted, remove and set aside.

Now it's time to fry the egg. While the egg is sizzling, you can get to work on the avocado. Halve, remove core, chop and spoon out. Quite easy. Depending on the size of the avocado, spread one half per sandwich and sprinkle with spices. We prefer to use salt, pepper, a little lemon juice and chili flakes.

Then you layer the bacon on top, put the egg on top and you're done.

A perfect start to the day that pampers your taste buds and sends you into the morning full of energy.

French Toast Sticks  (12 Sticks)

Cooking Time: approx. 15min

  • 4 Slices of Toast
  • 2 Eggs
  • 120ml Milk
  • 1 Tbsp. Sugar
  • 1 tsp. Cinnammon
  • Pinch of Salt
  • 2 Tbsp. Butter
  • Fruit, Berries, Honey, Nutella and/or Maple Sirup

  • Bowl
  • Frying Pan
  • Stove Top

Firstly, cut the slices of toast into three strips each. Then break the eggs into a shallow bowl and whisk. Add the milk, sugar, cinnamon and salt and mix well again.

Now melt the butter in a non-stick pan over a medium heat. Dip the strips of toast in the egg and milk mixture and place in the pan. After about 5 minutes, the strips should be crispy brown on both sides. Now you can remove them from the pan and serve with your favourite toppings and dips.

Your sweet French breakfast is ready to be enjoyed.

Hearty One-Pot Dishes for Lunch or Dinner

ONE-POT ITALIan Chicken (4 PORTIOns)

Cooking Time: approx. 30min

  • 1 Tbsp. Oliveoil
  • 20g Butter
  • 4 small Chicken breasts
  • 2 Garlic cloves
  • 80g dried tomatoes
  • 80ml White wine
  • 250ml Cream
  • 125ml Chicken- or vegetable stock
  • 60g Baby spinach
  • 25g Basil
  • Crusty Bread (e.g. Ciabatta)
  • Salt & pepper

  • Frying pan

Heat the oil and butter in a large pan over a high heat until foaming. Season the chicken and place in the pan over a medium heat. Fry the chicken for about 5 minutes on each side until just cooked through. Transfer to a plate and cover with foil to keep warm.

Now add the finely chopped garlic to the pan and fry for 1 minute until aromatic. Add the chopped tomatoes and stir. Deglaze with the wine and simmer for 1 minute until the liquid has reduced. Now add the cream and stock. Return the chicken breast to the pan and simmer for 5 minutes until the liquid has reduced again. Stir in the spinach, season and sprinkle with the basil leaves. Serve with crispy ciabatta and enjoy.

One-pot Chilli-prawn Pasta (4 Portions)

Cooking Time: approx. 30min

  • 1 Tbsp. Oliveoil
  • 40 g Butter
  • 3 green shallots
  • 2 Garlic cloves
  • 400g Can of cherry tomatoes
  • 500ml Chicken stock
  • 250ml Water
  • 1 Tbsp. Sweet-chilli sauce
  • 350g Spaghetti
  • 300g peeled praws
  • Parsley
  • Salt & pepper

  • Large pot
  • Stove top
  • Tongs

Melt the butter in a large pan over a medium heat until it foams. Add the finely chopped shallots and garlic cloves. Stir-fry for 2 minutes until soft and aromatic.

Now add the tomatoes, stock, sweet chilli sauce and 250 ml water to the pan. Season with salt, add the spaghetti and cook over a high heat for about 12 minutes, or until the pasta is al dente. Remember to stir occasionally. If the sauce reduces too much, you can add a little more water.

Add the cleaned prawns to the pasta and toss with tongs until everything is well combined. Cover and cook for 3 minutes until the prawns change colour. Drizzle with oil and sprinkle with parsley. To serve, season with a little pepper and your prawn pasta is ready.

Yummy Treats for Those With a Sweet Tooth

BBQ Banoffee Split (6 Portions)

Cooking Time: approx. 25min

  • 40g Soft butter
  • 50g Brown sugar
  • 1/2 tsp. Vanilla extract
  • 6 Ripe bananas
  • Pecan nuts, ice creme, whipped cream and/or yoghurt

  • Tin foil
  • Barbecue grill (or a campfire!)

Mix the butter, sugar and vanilla extract. Cut open the inside of each banana with a knife. Make sure not to cut them all the way through. Place each banana on a sheet of aluminium foil and spread the butter mixture evenly. Now all you have to do is press the edges of the foil together to seal the parcels.

Tip:  You can also prepare the parcels the day before and simply chill them until then!

Erhitze den Grill auf niedriger Stufe oder bis eine dünne Kohlenschicht grau geworden ist. Die Bananenpäckchen 15 Minuten lang garen, dabei einmal wenden.

Heat the grill on a low setting or until a thin layer of coals has turned grey. Cook the banana parcels for 15 minutes, turning once.

At the end of the cooking time, carefully unwrap the bananas (be careful not to lose the sauce inside!) Arrange on plates and serve with a scoop of ice cream, whipped cream or yoghurt, depending on your preference. Finish off with the pecans and sauce and you've got a delicious treat.

Of course, you can also get creative and create your own combination.

Cooking Time: approx. 10min

  • Ice cream cones
  • Butter biscuits
  • Chocolate drops
  • Mini marshmallows
  • Smarties, M&Ms or other tasty treats of your choice

It tastes just as good with small fruit slices or berries!

  • Tin foil
  • Campfire

Simply pack the desired ingredients alternately into the cones, wrap in aluminium foil and place in the campfire. It is best to place them on the edge so that the contents melt slowly and evenly. Now carefully remove from the fire, unwrap and enjoy!

The best thing is that everyone can create their own mixture to suit their taste!

With these simple, quick and incredibly tasty camping recipes, you'll have all the tools you need to turn your next PIA Camper outdoor expedition into a culinary adventure.
